Project Description:
Epidemiological evidence supporting the link between higher intakes of foods containing compounds with antioxidant properties (e.g. vitamins E and C, and the carotenoids) and reduced risk of human chronic diseases is substantial. The precise relationship between the chemical composition of food and our health, however, remains elusive. There is substantial evidence supporting the fact that certain phytochemicals are able to stimulate cellular antioxidant responses in reply to oxidative stress. Intervention studies using isolated antioxidant compounds (natural and synthetic, individually or combined doses) have not shown any consistent trend indicating they confer human health although studies using whole foods have. EUROFEDA has produced an up-to-date review of the known effects of dietary antioxidants at the molecular, cellular, tissue and whole body levels. This review will be published in January 2002 in Molecular Aspects of Medicine. The review concentrates on three major areas in antioxidant research: Biomarkers of oxidant/ antioxidant activity in proteins, lipids and DNA, bioavailability and bioactivity in terms of oxidant/ antioxidant effects on gene expression and mitochondrial function. Particular emphasis has been placed on whether, or not, the effects observed are meaningful for human health and disease, in terms of the experimental systems used, the doses used (nutritionally relevant levels, duration and source), and whether the compounds or their metabolites are likely to reach target tissues in an active form.
